These Independence Day cupcakes are decorated without too many details (or sprinkles)- in a good way. And with a special surprise inside, they couldn’t be better.
You will need chocolate box cake mix, LOTS of vanilla frosting, red and blue food color, one box of Jell-O chocolate pudding mix, one pint heavy whipping cream, blue edible pearls, and red colored sugar or tiny sprinkles.
To get started, make the cupcakes following the instructions on the box. While you are waiting for the cupcakes, start making the mousse. For the mousse, put the pudding mix in a bowl and add the whipping cream. Mix until there are no lumps in the mousse. Save for later. When the cupcakes are baked and cooled, use a piping tip to make a perfect hole in the cupcakes. Take a regular sized piping tip and spray it with nonstick baking spray for easier cake removal, which will make sense soon. With the wider side facing down, press the piping tip into the center of one of the cupcakes. Take the tip out and use a toothpick to press the cake out of the tip. Now you have a perfect secret hole in the center! Use a small spoon to put the mousse into the cupcake. Now, for the fun part! Not that none of the other things were fun, but still. The décor part! Start by dividing the frosting into three bowls. Color one red and one blue. Don’t color the third one. Now, you have red, white, and blue frosting! Duh. Take a piece of parchment paper and make stripes with the frosting. Roll it up and place it in a piping bag with a large star tip in it. (See pictures bellow)
This will make sections of the cupcake frosting swirl that are red, white, and blue. To make the perfect frosting swirl, start in the center of the cupcake and slowly make a large circle with your piping bag. Keep on going up making smaller and smaller circles as you go. When you are done, lift the piping bag off and stop pushing on it so no more frosting comes out. Place a few pearls and sprinkles on and you have a beautiful Independence Day cupcake!
